Chicken Sausage with Peppers and Kale

In skillet water saute (add 1/2" water):
1/4 c Peppers, Red, Yellow, Orange or Green chopped
onion slice chopped
handful of Kale chopped
a few mushrooms
1 link Chicken sausage by Al Fresco Italian flavor
Saute for 4-5 minutes then add:
1 egg (or just 2 egg whites)
1 stick Pepper Jack cheese stick chopped

The egg "poaches" in the vegie and sausage mix while rest of water cooks down.
It takes about 3 minutes until ready.....
This is a 10 minute meal with lots of protein and vegies which you can vary with leftovers in the fridge. Very healthy...





Food -
So many good snack or meal ideas to share. Right now I'm loving the Noosa Yogurt. It's a little higher in fat 6g and protein 9g but so tasty. On sale now at WF - Whole Foods.
